Chicken Wings

Healthy way or the unhealthily delicious way, pick your poison!

Oven fried

INGREDIENTSAMOUNT
Chicken wings1 kg
Vegetable OilAs needed
Salt1 tbsp
Baking Powder1 tsp
Cornstarch1 tbsp

METHOD

  1. Rub the salt on the chicken wings, spread them on a wire rack and place in the fridge for an hour. This will dry out your wings which is crucial for this method
  2. Dab the chicken wings with a kitchen towel to take any excess moisture and salt of the wings.
  3. Coat the wings with the baking powder and cornstarch and place on a wire rack in a preheated oven at 200 degrees. Bake or 30 mins.
  4. Flip the wings and bake for another 20-30 mins.
  5. Coat in whatever sauce you like.

Deep fried

INGREDIENTSAMOUNT
Chicken wings1 kg
Vegetable OilDependent on pan
Salt2 tbsp
Flour2 cup
Cornstarch1 cup
Paprika2 tbsp
Garlic powder2 tbsp
Onion powder2 tbsp
Cayenne pepper2 tbsp
Buttermilk500 ml

METHOD

  1. Mix half of the spices and salt to the buttermilk and add the chicken wings. If possible, marinate for a couple of yours.
  2. Mix the rest of the spices and salt with the flour and conrnstarch.
  3. Coat the wings in the mix, making sure the wings are thoroughly coated.
  4. Heat the oil in a deep pot (it should only go halfway, max 3/4), if you have a thermometer, it should read 175 degree celcius. If you do not, you can drop a sprinkle of flour, if it sizzles instantly it should be ready.
  5. Drop the wings in the oil making sure not to over crowd the pot. Fry for about 8-10 mins.
  6. Take them out and place on a wire rack.
  7. Coat in whatever sauce you like or have them as is!
